三代にわたり、私たちは築地で本鮪を扱ってきました。大間の漁師から直接買い付け、氷の上で丁寧に切り分ける。市場が動き出す前の朝6時、シャッターを上げます。

For three generations we have handled bluefin at Tsukiji — buying direct from the boats of Ōma, cutting on ice, raising the shutter at 6 in the morning while the market still hums. No tables, no chairs. Just the counter, the ice, and the fish.
